Refactor docs devguide examples for projects in subdirs

    Description

      This is a continuation of the work started in CCBC-1447. In that issue, we ignored the fact that the projects in the sub-dirs still have problems as well.

      Sub-dirs:

      • bincoding
      • encryption

      Work to do:

      • Refactor CMake configuration
      • Edit the README
      • Update code style and reformat with .clang-format file
      • Resolve any API updates and build issues
