Replace Atom with another recommended editor

The documentation for contributing to docs still mentions installing Atom as an editor: https://docs.couchbase.com/home/contribute/install-git-and-editor.html#install-an-asciidoc-editor

Atom was sunsetted in December 2022 :'( so this documentation should probably be updated either to remove mentions of a recommended editor, or to provide an alternative.
