Allow to transcode documents with no encrypted fields through JsonCryptoTranscoder

When the encryption configuration is set on the environment all Json documents are transcoded through JsonCryptoTranscoder. If the document has no encrypted fields, the transcoder may fail. Since the environment may be common, some documents may not require encryption at all.
