[Subdoc] Additional statistics for sub-doc API

As discussed with support, we want to add some additional sub-document API statistics to assist in supportability:

1. Running counters of total number of sub_doc_access and sub_doc_mutation operations.
2. Running counter of the size of the sub_doc request / responses.
3. Running counter of the total size of the documents that sub document is operating on.
