Clean up list of installed files

We need to clean up the list of files we install on the target server. I don't think we should
mock_engines headers, because that's private implementation details used by engine_testapp and
that test suite.. We should probably also consider renaming engine_testapp to something a bit less
"generic" now that we install it in the users bin directory.
