[Workload] Try to increase the client pool settings to run Jepsen tests with larger number of documents.

    Description

      The jepsen tests fails when the number of documents are very large (>10K) due to the java sdk failing to create enough connections with the jepsen workers. Test the tests with different client pool settings on the sdk to increase the number of connections.
