[windows] Improve cbcollect info formatting and usage

      Description

      Along with our renewed focus on Windows, supportability needs to take a significant step forward IMO.

      The current cbcollect_info does not seem to provide the same data that we find very useful in Linux.

      A couple problems that come to mind initially, but I would expect that someone takes a broader look at improving it overall:
      -The logs files seem to have binary characters which make them very hard to scroll through
      -The couchbase.log file does not seem to have a directory listing the same way it does in Linux. I'm not sure if there are other areas missing.

        Enough. But note that it doesn't mean we'll drop everything immediately and try figure out how to get this stuff on most hated and least convenient to work with os.

        As a work around "less -r" will removed the control characters.
