Allow transcoders to be passed in options

At this moment we only allow static polymorphism for transcoders, which might not be suitable for all the cases. For example, when the application does not know the type of the transcoder at the compile time and makes decision runtime like FIT.

As a solution to this problem, we could also allow passing transcoders in the options like other SDKs do.
