Revs_limit 1000 is no longer a recommended value

As per https://www.couchbase.com/blog/document-conflicts-couchbase-mobile/ and other resources, a revs_limit value of 1000 is discouraged. Yet, this value is very prominently displayed on the docs at https://docs.couchbase.com/sync-gateway/current/revisions.html#lbl-rtctrl

Kindly adjust the documentation such that users configure sensible values (or stick to the defaults)
