Add documentation for running multiple single node containers

In DOC-6085 there is a requirement to run multiple single node docker containers on a single host. We currently cover:

• running one single-node-cluster
• running a multi-node-cluster on the same physical host
• running a multi-node-cluster with the nodes distributed across more than one physical host

But not running multiple single-node-clusters on the same physical host
