Mockable provider interfaces no longer work

Due to various reasons, the mockable provider interfaces no longer match with the interfaces as provided by the core. These providers should be updated to match the core, and tests written to avoid the need to use the core for the majority of the testing (since technically gocb has no direct integration with any server components, it performs all operations via gocbcore).
