Auto-scaling metrics recommendations

As well as the general improvements listed in K8S-2237, we need to revisit the metrics listed in the per-service scaling examples.

We should no longer be recommending the use of the Couchbase Prometheus Exporter, instead using the native exporter in 7.0+, but there may be gaps there in the available metrics.
