Follow standard naming convention for Kafka config properties

All of the standard Kafka config properties use "dotted.lower.case" for the property names. There's no implied hierarchy, just dots between words instead of spaces.

Since we're changing property names for 4.x, this is the time to adopt the standard naming convention.
