Source: `couchbase.connector.name.in.offsets` should default to `false`

Change the default value back to `false`. Deprecate it.

There is no benefit to having connector name in offsets. Kafka already includes the connector name in the namespace of the saved offsets.

The only reason to retain this property is to support deployments where it's already set to "true".
