Improve shard stat logic to avoid warnings on backups smaller than the number of vbuckets

When in a backup some of the vbuckets are empty the shard files are not initialiized meaning the close workers can not get the document count as it is null, this throws warnings, ideally we just want to set the stat files to 0 and avoid the warnings
