Issue
Eventing function underwent auto undeployment as soon as function deployment was complete.
We are seeing this issue only on Windows platform and that too on intermittent basis.

Note
I have attached logs from all 3 Eventing nodes present in the cluster.
Attached test.log
as well showing that no undeploy operation was triggered around the same time as part of the test script.
