Upgrade Server 7.2.x to Erlang 25

Description

Cochbase Server 7.2.2 currently uses Erlang 24, as Couchbase Server 7.2 will be maintained until 2026, we need to update the version of Erlang to ensure we receive future code fixes.

Note: by upgrading to Erlang 25 we will require a cluster is on Couchbase Server 7.1.0 or later in order to upgrade to 7.2.4
