MutateInSpecBuilder does not expose the "RemoveBrackets" bool

The MutateInSpecBuilder methods don't expose the "RemoveBrackets" bool of the underlying MutateInSpec creation methods.

Changing this would constitute a breaking change, so the other option is to add an overload for each and marking the previous ones obsolete.
