acouchbase - Add collection tests

A decent amount of work needs to be done in order to setup tests for scopes/collections. The problem is how the base test infrastructure is built out. The new bindings have tests built on pytest and that infrastructure needs to be moved to the old client to verify changes (and also make maintain the test infrastructure less of a headache). So, creating this ticket to note the effort but in the near future acouchbase (and txcouchbase) should have collections tests available.
