Subdocument operations should use serializer and not transcoder

Currently the lookup-in operation will use the default transcoder which houses a serializer (JSON by default), but the subdoc operation should use the default serializer without using the transcoder. The details are a bit fuzzy in the RFC, but hopefully will have some bits hashed out (w.r.t. transcoders and serializers) in the near future.
