Bump LCB to get recent fixes

And update code accordingly. In particular, we bumped it to get the durable remove. But, there is also the internal retry when a collection or scope is not found (CCBC-1373) in master now. Worth grabbing this as well, and removing the retry we do in collections.cxx for this.

Also - lets bump the version to 1.0.0, and our log_levels enum should be log_level.

Finally, check on the bug fix extensions – I believe I may have fixed one or 2 and not updated the extensions
