Move to declarative docker-compose server/exporter and node config

Investigate the unification of the use of docker by moving from a combination of docker-compose and CLI to purely docker-compose.

When this is done, stop.sh will no longer need to remove the image and so expected behaviour of clean removing all images and stop.sh only stopping and removing the containers will be reached (make sure to update this in the README).

Additionally, declarative configuration of the demos, e.g., services run, number of clusters, number of nodes...
